The slow and caring process begins with the salmon being dry salted and pressed together in baskets to give a thicker and richer salmon. In our hearth, filled with fine shavings, we keep the temperature carefully below 600 degrees to create a white, clean and compact smoke that encloses the salmon.
During the cold smoking, the temperature keeps exactly 10 degrees when the smoke reaches the salmon and this is ongoing for at least a day.
